Chourico is a smoked pork sausage made with a fibrous casing. Patties are made with lean pork chunks and a blend of fine spices. Patties are best grilled (casing must be removed before consumption). Most often used in breakfast sandwiches – perfect on an English muffin. Or use in any lunch sandwich.
