Pinto Beans with Chourico
- 2 Cups cooked pinto beans or 2 14oz. can of beans
- 5-7 cloves minced garlic
- 1 Medium red onion diced
- Half Tablespoon cumin
- Salt
- Pepper
- 1 chopped chili peppers (or any hot pepper)
- Fresh salsa
- 1/2 cup minced fresh cilantro
- 7oz diced tomatoes (half can)
- 1 stick (0.5lb) Hot Chourico
- Saute onion, garlic, and chourico until tender. Add 3 Tablespoons of salsa, chili peppers, cumin and cook for an additional minute.
- Add beans and can of tomatoes. Cook on med/low heat. Add salt&pepper. Add cilantro and cook until wilted.
- Serve with salsa over rice.
