Skillet Chourico Nachos

  • ½ package Mello’s Finest Ground Chourico

  • Tortilla chips, homemade or store bought

  • 1 15oz can pinto beans, drained and rinsed

  • 1 cup mozzarella cheese, shredded

  • 1 jalapeño pepper, sliced

  • Slices of red onion

  • Green onion, diced

  • Fresh cilantro, chopped

  • Queso fresco


  1. Preheat oven to 350°F.

  2. In a small saucepan, heat a little olive oil then add ground chourico. Heat through and add any additional spices, if desired (extra paprika, cumin, or seasoned salt).

  3. Add chips to a skillet (alternatively can use a baking sheet). Top with cheese, beans, chourico, red onion, and jalapeños.

  4. Bake for 10 minutes, then remove from oven.

  5. Add green onion, cilantro, and sprinkle with queso fresco. Serve warm.
