Chourico Croissants

INGREDIENTS:

  • ½ pound Mello’s Ground Chourico

  • 4 butter croissants, sliced in half

  • 5 eggs

  • 1 tbsp milk

  • 1 tsp salt

  • 4 slices cheddar cheese

  • 3 tbsp mayonnaise

  • Cracked pepper

INSTRUCTIONS:

  1. In a medium saucepan over medium heat, heat a bit of oil then add eggs and milk. Whisk to combine and allow to cook through making scrambled eggs. Sprinkle with salt and set aside.

  2. In a separate pan, heat oil and cook ground chourico until hot.

  3. Construct croissants by adding cheese to the bottom, then chourico, then eggs. Add a bit of mayo to the inside of the top layer of the croissant to help hold it together.

  4. Bake at 350°F for 5-8 minutes or until cheese is melted and tops are crispy. Garnish with cracked pepper.
