Chourico Shakshouka

INGREDIENTS

  • ½ lb Mello’s Ground Chourico

  • 2½ cups marinara sauce

  • 4 eggs

  • 1 tsp salt

  • 1 tsp paprika

  • Cilantro, chopped

  • Crumbly cheese such as feta, queso fresco, or cotija

  • Tortilla chips, for serving

INSTRUCTIONS

  1. Preheat oven to 350°F.

  2. In a small sauce pan over medium heat, add oil and ground chourico. Cook thoroughly then set aside.

  3. In a small skillet (8-9”), pour in marinara sauce and heat on the stove over medium heat until bubbly. Add salt and paprika and stir.

  4. Crack eggs one at a time inside the sauce. Continue to cook until whites of the eggs begin to set.

  5. Add skillet to oven and allow to cook 8 minutes at 350°F then the next 2-3 minutes broiling on low to allow the egg yolks to cook through.

  6. Once the eggs are cooked, remove skillet and top with ground chourico, cilantro, and cheese. Serve with chips.
